Two quick toddler snack recipes (Brownies and peanut butter cookies)

As a mum, it is always exciting to have that amazing skill/ ability to whip up snacks that other wise could have been store bought, illd tell you why. 

You see, when you make some of these snacks yourself, you are confident about what you are giving your child, and can easily trace any case of food allergies. I have once fallen into the scary circumstance of a food induced allergy that manifested in my toddler from a carrot cake we bought at a restaurant. 

Even as a medical doctor, I was distraught, but thankfully, I and his dad put our medical knowledge into good use and dealt with the allergic reaction. 

Now, the major issue was identifying what exactly caused the reaction. I called the restaurant with a request to speak with the chef. Mind you, this was not to reprimand or judge him over the incident, but rather, to find out what exactly we needed to avoid for my toddler, going forward. 

Unfortunately, this chef was super defensive and just did not get the point of my call, and till date, we still do not know what exactly was in that cake. 

Back to the major point here, easy and quick snacks that could be made in the comfort of your home for toddlers are always a delight. Today, illd be sharing a quick brownie and peanut butter cookie recipe. 

Brownies

These used to be snacks I saw kids consume in foreign movies. I honestly had no idea they were super easy to whip up. All you need are four ‘easy to find’ ingredients fam! Find the full know how below.

Ingredients

3 -4 bananas (depending on the size of your bananas) 

1/3 cup of cocoa powder

1/2 cup of peanut butter 

1/2 tbsp maple syrup ( you could use one full tbsp if you would like it extra sweet) 

Instructions

  1.   Preheat the oven to about 350 F
  2.   In a clean bowl, mash your bananas finely, using a masher
  3. Add in your peanut butter in the amount stated above, and follow closely with cocoa powder
  4. Transfer your mix into any baking dish of your choice . 
  5.   Bake for 25 min.
  6.   Cool and set. Once cooled, cut them into toddler-sized portions for easy serving.

Peanut butter cookies

Before we proceed with this particular recipe. I would like to state that some children might have allergic reactions to peanut butter, and so being observant and noting if your child reacts to it, is very essential. if your child has ever successfully eaten groundnuts/peanuts with no issues, then I feel peanut butter won’t hurt said child in anyway. That being said let me give you the scoop on this recipe fam.

Ingredients 

  • 1/2 cup of peanut butter 
  • 1/2 cup of butter
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 11/4 cups of pre sifted flour 
  • 3/4 teaspoon of baking soda 
  • 1/4 teaspoon of salt

Instructions

  • In a clean bowl pour in your butter, peanut butter, White and brown sugar, egg and vanilla teaspoon
  • Mix together with your spatula
  • Then go in with your dry ingredients , your pre sifted flour, baking soda and salt. 
  • Incorporate well into the mix
  • Roll into balls, and press down with a fork that has been dipped in flour 
  • Preheat your oven to about 350F
  • Bake for 10 to 15 mins on ungreased cookie sheet
