INGREDIENTS
- Protein of your choice (Chicken, meat)
- Cooking Oil
- Tomatoes
- Onions
- Shombo
- Rodo
- Tatashe
- Bouillion cubes
- Salt
- Chicken/ meat stock
- Gino tomato paste
STEPS
1. The first thing I do when I buy fresh pepper ingredients at the market (Tomatoes, shombo, rodo, Tatashe, onions) is to split them into two.
2. Your two halves of pepper mix should include these aforementioned ingredients in the ratio Tomato(3) : Shombo(1.5) Tatashe(1.5), Rodo (1) and Onions (2)
3. For your first half, put your washed/clean peppers into a pot and boil on very low heat. Not to worry the fluid that exude from the pepper would suffice, there is no need to add water and if you refuse you can add very little to prevent stains on the pot.
4. For your second half, clean/rinse as per usual and glaze with very little salt and oil. Pour pepper mix in listed ratios into a baking dish and roast in the oven a bit over 10 to 15 mins.
5. When both mixes are well cooked, blend them separately but make their consistencies a bit rough, and set aside.
Now it is time for the magic!
1. Pour in enough oil into a clean cooking pot and throw in some chopped onions. Let the oil be just enough to fry your pepper mix please.
2. Allow your onions sauté for a little bit and exude all of the juice and then take out.
3. Add a substantial amount of Gino tomato paste to the mix and fry till it darkens, then pour in your roasted pepper followed by your boiled pepper and stir it all together
4. It’s time for the chicken/stock to go in as well, your mix should be seasoned for taste with adequate bouillion cubes.
5. Notice that no water was added right? Water has no buisness here when you have your chicken/meat stock
6. Your choice proteins (which must be cooked already) can make their grand entrance and soak up this yumminess.
7. When your stew starts to splash with bubbles, you know it ready for consumption
