Ingredients
- 240g sugar
- 185g plain flour
- 1/4 tablespoon of baking powder
- Lemon zest + 1⁄2 lime juice
- 1⁄2 tsp salt
- 3 eggs
- 60g vegetable oil
- 115g heavy cream
- 1tsp lemon extract
Baking Instructions
- We begin this fun process by whisking the sugar and lemon zest together with either a nice electric hand mixer or a manual whisk
- Add in your eggs and continue whisking together for 15 secs
- Next you go in with some double heavy cream and follow closely with the flour, whisk for another 5secs
- Also add in your lemon juice extract
- Don’t forget your baking powder
- Finally, pour in your vegetable oil, and whisk one last time for about 5 secs
- Glaze your pan of choice with some butter and flour
- Pour your mix into the pan
- Preheat your oven for 10-15 mins and then bake on 150 degrees for 30 mins
