In Life sometimes, it doesn’t hurt to deviate from the regular and try new things. Such is the case of this special delicacy I present to you all. It is one that would keep you salivating and coming back for more, in addition, don’t even get me stareted on explaining its amazing aroma.
This Sauce is a wonderful alternative for stew and can be enjoyed with just about any carb such as Rice, Pasta, Yam and even plantain. Remember guys, Carb isn’t the enemy here. Portion control is actually what you need to enjoy carbs maximally while staying healthy. Let’s get right into this yummy recipe.
Ingredients
- 1kg of pure goat meat {no skin or bones please. Also using the male goat is better as it is usually quite soft}
- 4 medium sized potatoes {chopped into cubes}
- 2 carrot sticks {cut into smaller sizes}
- Spring onions to garnish {use as much as you are comfortable with}
- Roughly Blended pepper mix { 4-5 large scotch bonnet peppers, 2 medium sized green pepper, 2 garlic cloves, One large onion bulb}
- Ground Rose mary spice {1tsp}
- Ground Basil spice {1 tsp }
- Ground Whole Oregano {1tsp}
- Thyme {1tsp}
- Curry {1tsp}
- Vegetable oil
STEPS
- The first thing to do is to get your pepper mix ready. Remove the stalk and seeds from your peppers, garlic cloves and onions then rinse before roughly blending. Set aside.
- In a clean bowl, rinse your goat meat and drain the water, then add in your spices curry, thyme, Whole oregano, Basil, rosemary, boullion cubes for taste. Mix all of those flavors in.
- Then bring back your roughly blended pepper mix and pour in 2 table spoons of vegetable oil, then mix thouroughly and leave to marinate fora few minutes/ hours in the fridge {depending on how long you are willing to wait}
- After marinating is complete, transfer to a clean pan/pot and fry your marinated goat meat till the rawness of the meat is eliminated.
- Then add in your potatoes, a little water to cook and a tsp each of all the previous spices you initially used to season the meat.
- Add in some carrots and Spring onions for special effects, garnish and leave to cook for another 5- 10mins
- Your Curry goat sauce is ready guys! Serve with any carb of choice.
