Oh my! Banana bread is one of the yummy and versatile goodness of this world, but could be super tricky to make.
I have flopped so many times with making banana bread but that has never stopped me from trying again. I finally got the perfect recipe! It’s in the measurement guys! The great thing about banana bread is that you could spice it up with countless toppings such as raisins, coconut flakes, nuts and even chocolate chips.
Every well made banana bread is bliss to the taste buds.
My first experience of Banana bread was sometime in 2019, I was pregnant that year and my cravings were intense. Of course, I had a strong need for delicious and highly nutritious meals. Thankfully my baby gurl @greenandhealthyNig had me covered. She was the angel who introduced me to this delight and I can’t thank her enough.
At first, I felt it was some sort of cake until she gave me more details on the workings of Banana bread and how different it was from cake. Even after pregnancy, I still find myself craving banana bread every now and then.
Without further ado, Let’s look into making one.
What you need
Bananas (3/4 medium sized bananas)
Melted butter or olive oil (1/4 cup)
Eggs (2)
All-purpose Flour (1 cup)
Baking powder (1/2 tbs)
White sugar (1/2cup) ps; unless if you don’t have a sweet tooth.
Brown sugar (1/4 cup)
Vanilla Essence (2 drops)
Milk (1/2 cup )
Steps
- Peel your bananas, mash and set aside
- In another bowl, pour in your all-purpose flour and baking soda. Stir for a good mix.
- It’s time to sort the other wet ingredients, in the bowl with the mashed banana, pour your eggs in and whisk for a few minutes. (You can use a mixer if you don’t like stress)
- Add in your brown and white sugar consecutively and keep whisking.
- Pour in 1/4 cup of melted butter or olive oil, two drops of vanilla essence and 1/4 milk and whisk again for about 3-5 minutes.
- Remember your flour mix with the dry ingredients, it’s time for them to join the party
- When all the ingredients are nicely combined, oil spray your baking pan lightly or brush your melted butter round the inside of your bread pan and then sprinkle a little flour all over.
- Don’t forget to add in toppings of your choice.
- Bake in the oven at 350degree Celsius for 30-35 mins
- When it is well cooked, any fork dipped in would come out dry and clean.
- Take out of the oven and then leave to cool for about 10 to 15 minutes, this would prevent the bread from falling apart. When it is cool, you can comfortably take it out of the pan.
- Enjoy with some youghurt or smoothie as I love to.
