Plantain boats are one of the quick and tasty breakfast recipes that are sure to keep you satisfied and ready for the day.
Ingredients

- 4 Ripe plantain {usually sweeter than unripe}
- 100g Minced meat
- 2 Large Scotch bonnet pepper
- Vegetable oil for cooking {4 tbs}
- bell peppers : One medium green and one medium yellow pepper
- One medium sized onion
Instructions
- Cut your bell peppers and onions into smaller sizes. . Glaze lightly with a pinch of salt.
- In a clean pan, add a little vegetable oil and your veggies, sauté lightly.
- Add in your tomato/onion paste and sauté for a few seconds more.
- Add in your minced meat and cook for about 10 mins.
- Don’t forget to add seasoning cubes for taste, as well as your other spices of choice {white pepper, chilli pepper, cayenne pepper and sweet chilli}
- Blend your yellow and scotch bonnet pepper into a rough paste, add a pinch of salt to the pepper mix
- With a pair of food gloves, rub your blended pepper mix all over the plantain and make an incision wide enough to accommodate your filling.
- Add a generous amount of your yummy minced meat filling and top it up with some cheese if available
- Place carefully in a baking dish and transfer to an oven to cook on low to medium heat for 15 mins
Notes
Make sure check on Your plantain boats after 15mins to prevent them from burning. Serve with a chilled drink for maximum enjoyment
