Potatoes are one of God’s numerous gifts to mankind, so much so, that he he gave us two variants; the sweet and Irish potatoes
Now the diverse ways in which these goodies could be made is something we can never talk enough about, from stir frys to potato balls and even mashed potatoes, the options are limitless Fam!
On the menu today, is one of my favorite and richest potato meals; drum rolls for My potato Burritos! You are gonna love this one.
But first let’s have a brief burrito history
HISTORY OF BURRITO
The origin of burritos is really not clear cut or easy to pin down. It is however most certainly a bridge between North Mexico and America.
Burritos have been traced back to the mingling of regional Mexican food preparation and cooking with that of Europeans, who in the 16th century came to the region after the Spanish conquest.
Burritos remain a world wide delight and have the amazing quality of versatility. Find below my amazing potato burrito recipe, I do hope you give it a well deserved trial! Your taste buds would thank you.
INGREDIENTS
- 200g Potatoes {Either sweet or Irish}
- 100g Minced meat
- Bacon (12 0z)
- One medium sized Onions
- Garlic cloves (2g)
- Green chilli pepper (5g)
- Two medium sized tomatoes
- lime juice (2 tbs)
- Olive oil (4 tbs)
- Avocado {optional}
- 2 Eggs
- Paprika pepper (1 tsp)
- Black pepper (1tsp)
- Tortilla wraps (4 sheets)
STEPS
- Roast Two medium sized tomatoes, one garlic clove, lime juice and one green chilli pepper lightly before transferring to a blender
- Slice some avocados and set aside
- Add some olive oil and a little salt after blending and set aside
- Cut your potatoes into cube sizes and fry till all sides are golden brown
- In a clean pan, add a little salt to your bacon and fry till crunchy
- In the same pan, after taking out the bacon, put in a little more oil and begin your to cook your minced meat
- Throw in some sliced tomatoes and onions to amplify flavour
- Add some bouillion cubes and Paprika pepper
- Cook minced meat till significantly done, then break in your eggs and cook
- Warm your tortilla wrap lightly, before proceeding with the layering
- In a warm tortilla wrap, put in your potatoes along with the minced meat mix with eggs and bacon piece. You could add your avocado at this point if u so desire.
- Roll the wrap to accomodate the filling
- Fry lightly on all sides
- Your potato burritos are ready
