I am here to silence the healthy food advocates who strongly discourage the consumption of noodles.

You know the popular saying…….You only live once? YOLO baby!! Try to live a little.
Yeah, Noodles is called chaff because it doesn’t have much to offer nutrient wise, but what if I tell you that could be tweaked?
Yes ke, you could funkify and fortify your noodles. And what’s more, your taste buds would sing you some songs of praises!
Just relax as I share with you this mouth watering, super delicious and nourishing delicacy.
Ingredient Line up
- 100g Chicken breasts
- 3/4 cup of Oil to fry
- Bouillon cube to season chicken
- 1/2 of one Tomato paste( Gino pepper onions)
- 1/2 a tsp of each Spice (paprika, suya pepper, Cayenne)
- 5 small sized Noodles (I love Indomie’s Onion chicken flavor)
- 2 small Carrot fingers
- 3 chopped tubes of Spring onion
- 1/4 each of Bell peppers (Red, yellow and green, you don’t have to use all, use what is available)
- 1 tbsp of Sweet Chilli sauce
- 1 tbsp of Soy sauce (optional)
- 2 Eggs
- 3 small Habenero peppers (ATA rodo)
PREPARATION STEPS
1. Chop your chicken breasts into small bits and season to perfection with bouillon cubes, paprika, cayenne pepper and suya pepper.
2. Cut your veggies (carrots, bell peppers and spring onions into tiny bits) and prep with a pinch of salt for taste, then set aside.
3. Fill your pot with water, add your clean eggs and bring to boil then take out before adding the noodles.
4. Add your noodle spices but leave out one or two for the veggies depending on how many noodles are boiling.
5. Boil for about 5-10 mins and ensure the noodles are not too soft and not too hard.
6. Drain the excess water thereafter and set aside.
7. Add a table spoon of vegetable oil to your pan and sear your chicken breasts till brown and properly cooked.
8. Take the chicken out of the pan, add a little more oil if needed(very little please) and then throw in your veggies with the last noodle spice and cook for a little over 2 mins.
9. Add in a little of the tomato paste (pepper onions) and stir well.
10. Add in your cooked noodles, pan seared chicken, some sweet chili sauce and soy sauce(optional) and give it a good wrist twist to mix all the ingredients evenly.
Voila! Your yummy noodles are ready to be devoured.
