The frittatas {Plantain and Potato edition}

Description

Frittatas are fancier and amazing ways to consume plantain and potatoes with eggs 


Ingredients

Scale
  • 45 medium eggs
  • Bell peppers, one small sized each  { Red, Yellow and green}
  • Two small tomatoes
  • 2 Scotch bonnet pepper
  • Half of an Onion bulb
  • 23 medium sized Plantain/ potato {could be sweet or Irish}
  • 150g Minced meat {optional}
  • Bouillion cubes 
  • Spices {Cayenne pepper, Paprika} 1tsp
  • Parsley flakes (1tsp)
  • Sweet chilli pepper (1 tsp)
  • 34 table spoons of Oil for cooking 

Instructions

  1. We start by preparing our veggies i.e slice/dice your onions, green, red and yellow bell peppers
  2. Glaze your veggies with some salt and Sauté lightly on low heat in a pan, not forgetting to add your spices and a little sweet chilli to the mix 
  3. After sautéing, set aside
  4. Dice either your plantain or potato, {whichever you have chosen to tho with} and set aside. 
  5. In a clean bowl, break your eggs, add the appropriate amount of bouillion cubes, and a little more of your pepper spices, then pour in your sautéed mix and some cooked minced meat if available (Please don’t put raw minced meat in there o}
  6. Stir everything together 
  7. In a baking dish or frying pan, pour in your egg mix and then start to arrange the diced plantain/potatoes all round 
  8. You could add in some cheese if you so desire
  9. Cook on low heat for about 5-8 minutes till the egg is properly cooked inside out
  10. Cut into desired shape with a pizza cutter, and serve to the delight of your taste buds.
