TSJ’s Chicken Alfredo pasta

Pasta is one gold mine that continues to serve and give delight. I am using the opportunity to appreciate the Italians for their pasta versatility, and uncountable recipes. What those people cannot do with pasta does not exist lol!

From the spaghettinis to the pennes, pasta remains a staple delight in many homes. I am talking about newschool homes o, not the ones where Eba and Amala is king. Please don’t come for me o, coz I know the elderly especially where I come from consider pasta garbage. 

It took the grace of God and prayers to get my Dad for example on board with pasta consumption lol!. My old man isn’t a fan with experimenting meals he didn’t grow up consuming. 

At least now, he takes pasta as long as it tastes fabulous, Noodles on the other hand is an impossicant, he has a pact never to attempt consuming that one. 

My mum on the other hand is indifferent about pasta. if you make some yummy pasta, she would waste no time delving in. The only thing is that you can never find her making pasta in her home. 

Enough with the side talk, let’s get into this recipe shall we?

The trade mark of my Alfredo pasta is extreme creaminess and cheesiness. 

What do you need?

Steps

  1. We commence this delicious recipe with spicing up our chicken. Add an appropriate amount of bouillion cubes to your chicken, follow with some spices(black, white, suya, cayenne and paprika) and then a little ketch up and pepper onion paste. 
  2. Glaze your chicken breast mix with cooking oil and then place in the fridge to marinate for about 15 mins before roasting in the oven on medium heat
  3. Now we focus on our pasta. Boil your pasta with a little salt and oil drop till it is soft enough to eat. Drain the excess water after boiling using a sieve and then set aside. 
  4. In another pot, add a medium chunk of your unsalted butter, once it is melted go in with your chopped onions, and chopped bell peppers(which should have been prepped lightly with a little salt) 
  5. Add just a little of your Gino pepper mix and stir before going in with your cooking cream. 
  6. After the cream is in, you need to spice this ensemble up with your white, black, paprika and suya pepper spices and of course your bouillion cube to taste. 
  7. Now your roasted chicken must make their entrance lol!
  8. Now that the mixture must have cooked for a few minutes, you can finally add in your pasta and parsley to garnish and stir of the yummy ness together. 
  9. The last and final step is the addition of your shredded mozzarella cheese. A few cooking minutes longer,  and your pasta is ready for consumption.

Ingredients

Penne pasta

Onions

Bell peppers (red and yellow)

Parsley

Cooking cream (Light or heavy, whichever rocks your boat)

Mozzarella cheese

Gino pepper onions

Chicken breasts

Butter

Cooking oil
