Today we delve into two Yam delicacies that are sure pleasers to the taste buds ; Yamarita paired with Corned beef stew and Yam fries paired with scrambled eggs. Let’s take them one at a stride y’all.
CORNED BEEF STEW
Ingredients
- Pepper mix {6 big Tomatoes, 3 Large Tatashe, 4 medium Shombo, 2 medium white onions and 3 small ata rodo pepper}
- Diced onions (50g)
- Corned beef ( 340 g)
- Tomato paste ( 65g)
- Oil for cooking (3 TBsp)
- Seasoning cubes (1 1/2)
- Spices {cayenne pepper, black pepper} 1 tsp each
Steps
- In a clean pan, add some vegetable oil and some sliced onions
- squeeze in your tomato paste and stir gently for a few seconds
- Introduce your roughly blended pepper mix
- Don’t forget to add your seasoning and other spices
- Finally, pour in your corned beef and leave to cook for another 5-7 mins
- Your corned beef stew is ready, set aside while we make make our sumptuous Yamarita

YAMARITA
Ingredients
- Yam (6 full slices of yam, further diced into desired shape)
- Flour (80g)
- Salt (1/2 tsp)
- Eggs (2 eggs)
- Bell peppers (50g of diced green, yellow and red bell peppers)
- Spices of choice {black pepper, cayenne pepper, paprika} 1tsp each
- Parsley flakes (1 tsp)
STEPS
- Cut your yam into the desired shape and rinse thouroughly
- In another clean bowl, pour in your flour, add a little salt and your spices and combine
- Don’t forget to add your parsley flakes
- In another bowl, break in your eggs, add a pinch of salt and your bell peppers
- Coat your cut yam strips completely in your flour and then in the bowl with your egg mix, and set aside till all yam strips are finely coated.
- Fry your yam strips till golden brown and serve with the corned beef stew.

This is one of the easiest and quickest recipes you could whip up for breakfast guys

- Seasoning cubes (11/4 chicken cubes)
- Paprika pepper 1/2 tsp)
- half of one small Onion bulb (diced)
- Tomatoes (one cherry tomato diced)
- cooking oil (3 tbsp)
STEPS
- Break your eggs in a bowl and prep with appropriate seasoning cubes and paprika pepper
- Pour in 2 table spoons of oil in your frying pan and Sauté your sliced onions and tomatoes lightly
- Pour in your Eggs and scramble with tge cooking spatula/flipper
- Set aside and concentrate on the Yam fries
Yam Fries
Ingredients
- Fresh and white Yam
- Salt
- Cooking oil
- 1/4 cup of water
STEPS
- Cut your white Yam into desired shape and size. Glaze with some salt
- In a clean cooking pan, pour in some oil good enough for a deep fry
- Add in your Yam
- After a min or two in pour in a quarter cup of water depending on how much Yam you intend to fry
- Fry all sides until golden brown
- Serve nicely with your scrambled eggs and a cold bottle of Juice if available
